Delicious Vegetarian Goodness

Anastasia's Apple Crisp - NEW!

(My kids loved this delicious after-school snack) 

Ingredients:

  • 8 apples (green pippins are best, but you can substitute)
  • Juice of 1 lemon
  • 1 teaspoon cinnamon
  • 2 tablespoons whole wheat flour
  • 3/4 cup raisins
  • water ot apple juice

Topping:

  • 1 cup Athenian Harvest organic muesli
  • 1/3 cup toasted wheat germ
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup butter (or oil)

Directions:

  1. Preheat oven to 375o F
  2. Slice apples until you have enough to fill a greased 9" x 13" baking dish
  3. Mix the apples in a bowl with lemon juice, cinnamon, flour and raisins
  4. Return them to the baking dish, adding enough water or apple juice to cover the bottom
  5. Mix topping in a bowl and press onto top of apples
  6. Bake for 25 minutes or until  apples are soft

Apple Grove Muesli

Ingredients:

  • 3 apples
  • 1/2 cup bread crumbs
  • 1 cup Athenian Harvest organic muesli
  • 2 teaspoons cinnamon
  • 1/2 cup brown sugar
  • 1/3 cup melted butter
  • 1/2 cup milk or water

Directions:

  1. Preheat oven to 350°
  2. Slice or chop apples
  3. Mix together bread crumbs, muesli, cinnamon and sugar, then add apples
  4. Add butter and milk and toss well
  5. Spread into an oiled baking dish (about 9x9 inches)
  6. Bake 35 to 45 minutes 
  7. Serve hot or cold

Athenian Harvest Muesli Bars

(A lunchbox treat!)

Ingredients:

  • 1/2 cup unsalted butter
  • 1/3 cup packed brown sugar
  • 3 tablespoons honey
  • 2 cups Athenian Harvest muesli

Directions:

  1. Preheat oven to 350°. Grease an 11x7 inch baking pan.
  2. In medium sauce pan, over low heat, combine butter, brown sugar and honey. Cook, stirring, until butter is melted and sugar is dissolved. Remove from heat. Add muesli and mix with a wooden spoon until well combined.
  3. Press mixture evenly into the prepared baking pan.
  4. Bake for 15 to 18 minutes in the preheated oven, until the top is golden brown. Let cool in the pan and cut into bars.

Ambrosial Granola Muffins

Ingredients:

  • 1 egg
  • 1 cup buttermilk or 1/2 cup milk and 1/2 cup yogurt
  • 1/2 cup brown sugar
  • 1/3 cup melted butter or oil
  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 1/2 cups Grecian Grove Organic Granola

Directions:

  1. Preheat oven to 400°
  2. Oil a 12 count muffin pan
  3. Beat egg slightly; add buttermilk, sugar and butter
  4. In a separate bowl, pre-mix all dry ingredients
  5. Add dry mix to wet, stirring slightly until flour is just moistened
  6. Fill cups 2/3 full and bake for 20 to 25 minutes
  7. Remove from pan immediately

Easy Granola Pie Crust

Ingredients:

Directions:

  1. Preheat oven to 325°
  2. Combine all ingredients. Use enough butter or oil to provide a consistency that can be pressed into a glass pie dish
  3. Bake for 10 to 12 minutes

Raspberry-Filled Granola Bars

Ingredients:

  • 3/4 cup butter softened
  • 1/4 cup sugar
  • 1 and 1/2 cups flour
  • 1/2 teaspoon baking powder
  • 1 and 1/2 cups Grecian Grove Antioxidant Blend Organic Granola
  • 1 cup raspberry preserves

Directions:

  1. Preheat oven to 375°.
  2. Cream together butter and sugar.
  3. In a separate bowl pre-mix flour and baking powder.
  4. Add granola and mix.
  5. Add dry mixture to butter and sugar, mixing together to form a crumbly consistency.
  6. Pat 2/3 of the mixture into a baking pan (about 13x9 inches).
  7. Spread preserves onto mix, and cover preserves with the remaining mixture.
  8. Bake for 20 to 25 minutes.
  9. Cool pan on an elevated rack to allow air flow. Cut into bars or squares.

Banana Honey Bread

Ingredients:

  • About 2 cups ripe bananas
  • 1/2 cup butter, softened
  • 1/2 cup honey or maple syrup
  • 2 eggs
  • 1/2 cup yogurt
  • 1 teaspoon vanilla
  • 1 1/2 cups Venetian Vineyard Organic Granola
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Directions:

  1. Preheat oven to 350°
  2. Oil a large bread pan
  3. Mash bananas well
  4. Cream together butter and sweetener
  5. Add eggs and beat until mixed
  6. Add yogurt, vanilla, and bananas and mix well. Stir in granola
  7. In a separate bowl mix all other dry ingredients
  8. Combine all and mix well
  9. Bake for 50 to 55 minutes

Banana Crunch Pancakes

Ingredients:

  • 1 ripe banana, mashed (about 3/4 cup)
  • 1 and 1/2 cups yogurt
  • 2 teaspoons vanilla
  • 4 egg whites
  • 1 cup flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 cup Venetian Vineyard Omega-3 Ambrosial Granola

Directions:

  1. Mash banana well, add yogurt and vanilla and mix
  2. In a separate bowl, beat egg whites until peaks form
  3. In a second bowl, mix all dry ingredients until well blended
  4. Mix wet and dry ingredients together, and then fold in egg whites until just incorporated
  5. Pour 1/3 cup scoops onto a hot oiled skillet, assisting as needed to form 3 and 1/2 inch circles. Cook for about 1 minute until bubbles appear on surface, flip and cook another minute
  6. Serve with favorite toppings

Chocolate Granola Squares

Ingredients:

Directions:

  1. Slowly melt chocolate in a medium pan, stirring gently. When smooth, stir in all granola except a few tablespoons for topping
  2. Pour into an oiled dish about 9 x 5 inches. Spread evenly and sprinkle with remaining granola for topping
  3. Cool to room temperature, then refrigerate for 30 to 60 minutes
  4. Cut into squares

Maple Drop Ambrosial Cookies

Ingredients:

  • 3/4 cup butter, softened
  • 3/4 cup maple syrup
  • 1 egg
  • 1 teaspoon vanilla
  • 1 and 1/3 cups flour
  • 1/2 teaspoon baking powder
  • 3/4 cup raisins or other dried fruit
  • 3 cups of Venetian Vineyard Omega-3 Ambrosial Granola

Directions:

  1. Preheat oven to 350°
  2. Cream together butter and maple syrup
  3. Add egg and vanilla and mix well
  4. In a separate bowl mix the flour and baking powder well, adding fruit and granola
  5. Combine all ingredients and mix
  6. Drop onto oiled cookie sheet, baking for 10 to 12 minutes

Enjoy!

 

  • For extra protein, spread peanut butter on a whole grain slice of bread, cover with a layer of Venetian Vineyard Omega-3 Plus Organic Granola and top it with banana slices. Mmm good!
